Ingredients

  • 1 kg lamb shoulder, cut into pieces
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • 1 tablespoon paprika
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 cup raisins
  • 1 can (400g) diced tomatoes
  • 2 cups chicken broth
  • 1 cup couscous
  • Fresh mint for garnish

Instructions

  1. Season the lamb with salt, pepper, and Moroccan spices (cumin, coriander, and paprika).
  2. Heat a skillet over medium-high heat and brown the lamb on all sides for about 5 minutes.
  3. In the crockpot, combine chickpeas, raisins, and diced tomatoes.
  4. Add the browned lamb on top of the mixture in the crockpot.
  5. Pour chicken broth over the lamb and cover. Cook on low for 6-8 hours, or until lamb is tender.
  6. About 30 minutes before serving, prepare couscous according to package instructions.
  7. Fluff couscous and serve topped with the lamb and chickpea mixture. Garnish with fresh mint if desired.
