Ingredients

  • 300 grams couscous
  • 400 milliliters vegetable broth
  • 200 grams chickpeas (canned, drained)
  • 150 grams carrots (sliced)
  • 100 grams raisins
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the couscous under cold water until the water runs clear, then drain.
  2. In the crockpot, combine couscous, chickpeas, carrots, raisins, and spices (cumin, coriander, cinnamon, salt, and black pepper).
  3. Add vegetable broth and olive oil, then stir to combine all ingredients.
