Ingredients

  • 1 cup cornmeal
  • 1 cup milk
  • ½ cup sugar
  • 2 large eggs
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract
  • 2 cups milk (for custard)
  • Salt (to taste)

Instructions

  1. Grease the inside of the slow cooker with butter or cooking spray.
  2. In a large mixing bowl, combine 1 cup of cornmeal, 1 cup of milk, ½ cup of sugar, 2 eggs, ¼ cup of melted butter, and 1 teaspoon of vanilla extract. Mix until smooth.
  3. Pour the cornbread mixture into the greased slow cooker.
  4. In a separate bowl, whisk together 2 cups of milk, 2 eggs, and a pinch of salt. Pour this custard mixture over the cornbread batter in the slow cooker.
  5. Cover the slow cooker and cook on low for 3 to 4 hours, or until the center is set and a toothpick comes out clean.
  6. Once done, remove the lid and let it cool for about 10-15 minutes before serving.
  7. Top with a dollop of butter and honey for extra flavor, if desired.
