Creamy Sweet Potato Mash with Maple & Cinnamon

Ingredients

  • 500g sweet potatoes
  • 120ml vegetable broth
  • 50ml maple syrup
  • 1 teaspoon ground cinnamon
  • Salt to taste
  • Pepper to taste

Instructions

  1. Peel and chop 500g sweet potatoes into chunks.
  2. Add the chopped sweet potatoes to the crockpot.
  3. Pour in 120ml of vegetable broth.
  4. Add 50ml of maple syrup and 1 teaspoon of ground cinnamon.
  5. Season with salt and pepper to taste.
  6. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours until the sweet potatoes are tender.
  7. Once cooked, mash the sweet potatoes with a potato masher until smooth and creamy.
  8. Taste and adjust seasoning if necessary, adding more maple syrup or cinnamon if desired.
  9. Serve warm as a side dish or enjoy as a filling main dish.
