Ingredients

  • 4 chicken breasts
  • 1 cup long-grain white rice
  • 1 can black beans (400g)
  • 1 cup corn (fresh or frozen)
  • 1 can diced tomatoes (400g)
  • 1 red bell pepper, chopped
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 1 tablespoon Tex-Mex seasoning
  • Fresh cilantro for garnish

Instructions

  1. Season chicken breasts with salt, pepper, and your favorite Tex-Mex spices.
  2. Place the seasoned chicken in the bottom of the slow cooker.
  3. Add uncooked long-grain rice around the chicken.
  4. Pour in canned black beans, drained and rinsed.
  5. Add corn, diced tomatoes, and chopped bell peppers on top.
  6. Pour chicken broth over the ingredients, ensuring the rice is submerged.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. Once cooked, shred the chicken with two forks.
  9. Mix everything together gently and adjust seasonings if necessary.
