Ingredients

  • 6 large eggs
  • 1 cup salsa
  • 2 cups tortilla chips, crushed
  • 1 cup queso fresco, crumbled
  • 1 small onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by chopping cilantro, onion, and any additional toppings you prefer.
  2. In a large mixing bowl, combine eggs, salsa, and spices; whisk until well blended.
  3. Add tortilla chips and gently fold them into the egg mixture.
  4. Spray the crockpot with cooking spray and layer half of the mixture at the bottom.
  5. Sprinkle half of the queso fresco over the first layer.
  6. Add the remaining egg and chip mixture on top and finish with the rest of the queso fresco.
