  • 1 cup quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 2 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Sour cream and cilantro for topping (optional)

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a large crockpot, add the rinsed quinoa, black beans, corn, salsa, cumin, chili powder, and vegetable broth.
