Ingredients

  • 200g red lentils
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 1 liter vegetable broth
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2-3 tbsp fresh mint, chopped
  • Juice of 1 lemon

Instructions

  1. Rinse the red lentils thoroughly under cold water and set aside.
  2. In the crockpot, combine the lentils, chopped onion, minced garlic, diced carrots, and diced celery.
  3. Add the vegetable broth, cumin, and a pinch of salt and pepper to the crockpot.
  4. Stir in the chopped mint and lemon juice.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
