Ingredients

  • 2 medium carrots, diced
  • 1 medium zucchini, diced
  • 1 medium onion, chopped
  • 1 cup cherry tomatoes, halved
  • 4 cups vegetable broth
  • Juice of 2 limes
  • 1/2 cup cilantro, chopped
  • Salt and pepper, to taste

Instructions
