Ingredients

  • 2 medium zucchinis
  • 2 carrots
  • 2 celery stalks
  • 1 small onion
  • 2 garlic cloves
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) white beans, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Chop the carrots, celery, and onion, then add them to the crockpot.
  2. Add the diced tomatoes, vegetable broth, and white beans to the pot.
  3. Season with garlic, Italian seasoning, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
